The story says that our grandparents used to mix sheep’s milk curd with cow’s milk curd to obtain a kneaded cheese, creamy but also sharp, which defined the taste of the traditional recipes. The legacy of the present says that the Moldovian Tochitura, with kneaded cheese made at Răchiți, is a fairy tale.
